I realise that chasing the latest version of infrastructure components used in TrackStudio might be a fruitless exercise, but as we have a TrackStudio system exposed externally for customers to use, I'm concerned about the status of some components used by TrackStudio, in particular jetty (seems to be 6.1.26) and the jre to use, (currently only java 1.7 is supported according to the requirements).

jetty 6.1.x was EOL in Jan 2010 (4 years prior to this post apparently) or maybe 2012 (according to this post), the latter post indicating some issues with jetty 6.

java 1.7 (or 7) isn't receiving public updates after Apr 2015 according to Oracle here.

Are there any plans to update TrackStudio to use supported versions of these infrastructure components (along with any other items used)?

Yes, next TrackStudio version (5.5) will use latest jetty and JDK 1.8 (this change has been already implemented).

We have no hard release date, but going to release beta versions as something will be ready.
